OWNER & HEAD BREWER

Todd has over 15 years’ experience professionally brewing award-winning craft beer on small, mid- size, & large commercial brewing systems in Austin, Texas. Previously, he was Head Brewer of NLand Brewing Company at NLand Surf Park. Hired by Doug Coors, heir of the Coors Brewing Company, Todd over saw the build-out of the brewery and managed all brewing and taproom operations. Previously, he brewed at Independence Brewing Company for more than 4 years. Todd started his brewing career at LoveJoy’s Brewpub in downtown Austin where he served as Head Brewer for more than 4 years. 

CHEF

DJ is a Smithville native who brings over eight years of professional culinary experience to our team. Before joining us, he honed his skills at Honey’s Pizza until its closing in 2024. Growing up in Smithville, TX, DJ's passion for cooking was sparked in his family kitchen, leading him to pursue a professional career in the culinary arts.. When he is not cooking up amazing eats at the brewery for guests, you will find DJ golfing, reading, and working his cows on his ranch. DJ loves Asian and Mexican food. His favorite SBC beers include: Schwartz & Helles.

OWNER & HEAD OF ENGAGEMENT

As Todd's wife and co-owner of SBC, Ashley juggles multiple roles, all while holding a full-time job dedicated to supporting Texas nonprofits and advocacy. A proud 7th-generation Texan, Ashley brings her passion for community to everything she does.

Ashley’s favorite beers crafted by Todd include any West Coast IPAs and easy-drinking varieties like the SBC Helles and Buescher Light.
